How to Make Simple Greek Salad
- Peel, slice and quarter the cucumber and cut tomatoes in half.
- Squeeze the juice from half a lemon.
- Combine all ingredients and gently toss to coat. (Left overs can be refrigerated for 2-3 days, simply stir to redistribute olive oil before serving again).
- *Optional Ingredients -
Salt to taste (I never add salt as the feta is "salty" enough for me)
1/4 cup black olives, slices or halved
1-2 pieces worth of bacon (crumbled or chopped)
1/2 tsp fresh lemon zest
3-4 anchovies (minced or chopped)
*note that if you add instead if substitute any ingredients you may want to increase the olive oil by half a tablespoon.
