For picky eaters, this is a great way to incorporate brussels sprouts into a dish. It makes a great tasting slaw.

Ingredients

  • 1/2 cup toasted pecan pieces
  • 1 1/2 pounds brussels sprouts, trimmed
  • 6 tablespoons mayonnaise
  • 3 tablespoons dijon mustard
  • 2 tablespoons honey
  • 6 tablespoons coconut oil
  • 1 teaspoon orange zest, grated
  • 1/4 cup champagne vinegar
  • 2 tablespoons orange juice
  • - salt and pepper to taste
  • 1/4 cup dried cherries or cranberries - can use pomegranate seeds

How To Make shaved brussels sprouts w/ honey-orange dijon dres

  • Step 1
    Preheat the oven to 375 degrees. Place the pecans in a single layer on a baking sheet and bake for approx. 6-8 min. or until golden.
  • Step 2
    Using a grater, shred brussels sprouts using the large holes - chop any remaining pieces that are left.
  • Step 3
    Mix together the mayo, mustard, honey, coconut oil and orange zest in a large bowl - combine well. Add the brussels sprouts and toss to combine. Season with additional salt and pepper to taste.
  • Step 4
    Transfer to a serving bowl and top with dried cherries. Refrigerate several hours before serving.
