Ingredients
- 1/2 cup toasted pecan pieces
- 1 1/2 pounds brussels sprouts, trimmed
- 6 tablespoons mayonnaise
- 3 tablespoons dijon mustard
- 2 tablespoons honey
- 6 tablespoons coconut oil
- 1 teaspoon orange zest, grated
- 1/4 cup champagne vinegar
- 2 tablespoons orange juice
- - salt and pepper to taste
- 1/4 cup dried cherries or cranberries - can use pomegranate seeds

Step 1Preheat the oven to 375 degrees. Place the pecans in a single layer on a baking sheet and bake for approx. 6-8 min. or until golden.

Step 2Using a grater, shred brussels sprouts using the large holes - chop any remaining pieces that are left.

Step 3Mix together the mayo, mustard, honey, coconut oil and orange zest in a large bowl - combine well. Add the brussels sprouts and toss to combine. Season with additional salt and pepper to taste.

Step 4Transfer to a serving bowl and top with dried cherries. Refrigerate several hours before serving.
