salmon salad

A healthy light meal with very little clean up mess. I have also made this using an orange in place of the lemon. Even my Grandsons like it, and said it doesn't taste "fishy"

Ingredients
- 1 medium salmon, skinless filet
- 1 medium lemon
- 2 - handful of salad greens
- 2 - radishes, sliced
- 1/4 - cucumber sliced
- 12 - cherry tomatoes (halfed)
- 1/4 cup red wine vinegar
- 1/8 teaspoon dijon mustard
- 1/4 teaspoon garlic paste
- 1/4 teaspoon oregano, dried
- 1 tablespoon water
- 1/4 cup olive oil, extra virgin
- 1 - sheet cedar paper (soaked)
How To Make salmon salad

Step 1Soak cedar paper for 10 minutes. Zest 1 lemon Juice 1 lemon Salt and pepper to taste marinade Salmon in lemon zest and lemon juice Let rest while cedar paper is soaking. place Salmon on Cedar paper and girl on both sides till done to your liking. (about 10 minutes each side) (I use a flavowave oven at 400 degrees)

Step 2prepare salad using greens (your choice), radish, cucumber.

Step 3Mix red wine vinegar, dijon mustard, oregano, garlic paste, water. (let rest 5 minutes) Whisk in Olive Oil.

Step 4Assemble Salad Place Grilled Salmon on top Drizzle Dressing over the Salmon and Salad
