This is a quick and easy recipe. My 1 year old daughter gobbles this healthy dish right up ..so with that said this dish is kid tested and approved

Ingredients For salmon salad

  • 1 1/2 lb
    sock eye salmon
  • 1 c
    grated beets
  • 1 bag
    spinch/arugula mix
  • 2 tbls
    chopped sundried tomatos
  • 1
    juice from 1 lemon
  • 2 tsp
    basil
  • 2 tsp
    dill weed
  • pinch
    pepper
  • pinch
    seasalt
  • 2 c
    quinoa, cooked

How To Make salmon salad

  • 1
    place salmon in baking dish , put the dill basil seasalt and the pepper all over fish.
  • 2
    Cover the salmon with the spinich arugula mix, then the sundried tomatoes , and then the grated beets. Squeeze lemon all over the dish .

    Cover with foil and then cook in 450 oven for about 15 minutes or till fork tender. Take out of oven and place on top cooked quinoa . Enjoy its delicious : ) and very healthy
