This comes from my mother's collection of old recipes. I thought I share this recipe,since we are in Lent Season. It makes a good lenten Friday's simple supper.

Ingredients
- 1 - 15 1/2 oz can salmon,dran,boned, & flake
- 3/4 cup minced celery
- 1/2 - medium cucumber (or 1 small cucumber) chopped
- 1 tablespoon minced onion
- 3/4 cup mayonnaise (can substitute light mayonnaise)
- 1 tablespoon fresh lemon juice
- 2 tablespoons dijon, or spicey mustard
- 1/4 teaspoon dill weed, or add less or more to preferred taste
- 3 large hard boiled eggs
- 1/8 teaspoon ground nutmeg
- optional - dill fans for garnish
- - light rye bread lightly buttered/or any type of thick bread (may lightly oven toast if wish to do so)
How To Make salad salmon sandwich

Step 1Blend Salmon,cucumber,celery,eggs, and onion together.

Step 2While in a seperate bowl blend mayonnaise, dill weed,nutmeg, mustard, and lemon juice.

Step 3Combine mayonnaise mixture into the Salmon Mixture. Toss gently to blend well. Cover and chill.

Step 4To Serve. Place lettuce leaves on half of bread slickes. The other half of bread slice spread on thick the salmon mixture. Close sandwich and garnish with dill pickles fans (optional).
