Ingredients

  • 16 ounces can black beans, rinsed
  • 10 ounces frozen corn, thawed and drained
  • 1 can hearts of paln, drained and cut in 1/4" rounds
  • 2 large tomatoes, seeded and diced
  • 1/2 - red onion, minced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 3 tablespoons fresh lime juice
  • 1 teaspoon ground coriander

How To Make salad of black beans, hearts of palm and corn

  • Step 1
    Mix all ingredients in a medium bowl. Season salad with salt and pepper. Can be made a day ahead.
  • Step 2
    Cover and refrigerate.
