Ingredients For salad of black beans, hearts of palm and corn

  • 16 oz
    can black beans, rinsed
  • 10 oz
    frozen corn, thawed and drained
  • 1 can
    hearts of paln, drained and cut in 1/4" rounds
  • 2 lg
    tomatoes, seeded and diced
  • 1/2
    red onion, minced
  • 1/2 c
    chopped fresh cilantro
  • 1/4 c
    olive oil
  • 3 Tbsp
    fresh lime juice
  • 1 tsp
    ground coriander

How To Make salad of black beans, hearts of palm and corn

  • 1
    Mix all ingredients in a medium bowl. Season salad with salt and pepper. Can be made a day ahead.
