A very simple Persian salad that is so refreshing and easy to make.

Ingredients

  • 3 large firm tomatoes
  • 2 - english or persian cucumbers
  • 1 medium vidalia or red onion
  • 2 tablespoons lemon or lime juice, freshly squeezed
  • 2 tablespoons olive oil, extra virgin
  • 1 tablespoon fresh mint
  • 1 teaspoon fresh garlic, minced
  • - kosher salt and freshly ground black pepper to taste

How To Make salad-e shirazi

  • Step 1
    Dice all vegetable into a small dice. Place into a bowl and add lemon or lime juice, olive oil, fresh herbs and salt and pepper. Toss gently and serve.
  • Step 2
    This is a staple in Persian household. I have a friend that hates cucumbers that will eat Sharzi. I sometimes leave the olive oil out and just use the freshly squeezed juice to dress the vegetable.
