Ingredients For saffron orzo salad with pine nuts

  • 1/2 c
    currants
  • 1 c
    boiling water
  • 1 16 oz pkg
    orzo pasta
  • 1/2 c
    olive oil
  • 1/4 tsp
    ground saffron
  • 2 clove
    garlic, minced
  • 3 Tbsp
    fresh lemon juice
  • 2 tsp
    ground turmeric
  • 1 tsp
    sugar
  • 1/2 tsp
    salt
  • 1/4 tsp
    ground cumin
  • 1/4 tsp
    pepper
  • 2/3 c
    pine nuts, toasted
  • 1/4 c
    chopped fresh mint
  • 1/4 c
    chopped fresh flat leaf parsley
  • 3 Tbsp
    chopped fresh cilantro

How To Make saffron orzo salad with pine nuts

  • 1
    Combine currants and boiling water and let stand for 5 minutes. Drain and set aside. Cook orzo according to package directions; drain. Set aside and keep warm.

    Combine oil and saffron in a bowl. Let stand for 15 minutes. Stir in garlic and next 6 ingredients. Add orzo and toss. Let cool. Add currants, pine nuts, and remaining ingredients. Toss.
