Ingredients
- 1/2 cup currants
- 1 cup boiling water
- 1 16 oz packages orzo pasta
- 1/2 cup olive oil
- 1/4 teaspoon ground saffron
- 2 cloves garlic, minced
- 3 tablespoons fresh lemon juice
- 2 teaspoons ground turmeric
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon pepper
- 2/3 cup pine nuts, toasted
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh flat leaf parsley
- 3 tablespoons chopped fresh cilantro
How To Make saffron orzo salad with pine nuts

Step 1Combine currants and boiling water and let stand for 5 minutes. Drain and set aside. Cook orzo according to package directions; drain. Set aside and keep warm.

Step 2Combine oil and saffron in a bowl. Let stand for 15 minutes. Stir in garlic and next 6 ingredients. Add orzo and toss. Let cool. Add currants, pine nuts, and remaining ingredients. Toss.
