This would be a great dish for pitch-in dinners in the summertime. Or any other time, for that matter. It's loaded with healthy vegetables and is very popular in India.

Ingredients

  • 1 c
    yellow corn, frozen
  • 1 c
    green peas, frozen
  • 1 c
    green beans, cut into 2-inch pieces, frozen
  • 1 small
    red delicious apple, unpeeled but cored
  • 1 c
    carrot, peeled and diced
  • 1 c
    potato, peeled and diced
  • 1 stalk(s)
    celery, finely chopped
  • 1 c
    mayonnaise
  • 2 Tbsp
    milk
  • 1 Tbsp
    sugar
  • ·
    salt to taste
  • 1 pinch
    ground black pepper
  • 1 dash(es)
    mustard, yellow or brown

How to Make RUSSIAN SALAD (SALAD OLIVIER)

Step-by-Step

  1. In a large pot, bring 6 cups of water to a boil. Add 2 tsp. salt. Add diced potatoes and carrots. Cook over medium heat for 10 minutes. Add all the frozen vegetables and cook for 1 minute. Remove from heat.
  2. Drain the veggies and place them in a bowl of cold water.
  3. In a small bowl, whisk the mayonnaise with salt, sugar, black pepper, mustard and milk.
  4. Drain the veggies again and transfer them to a large serving dish; add apple and celery. Fold in the mayonnaise mixture. Mix thoroughly, being careful not to break vegetables.
  5. Chill until ready to serve.
