Typically the Russian idea of a salad isn't what we Americans would call a salad. It may be a dish of fruit, or a dish of vegetables--what we might call a side dish. This yummy cole slaw qualifies as a salad nearly everywhere.

Ingredients

5 c
finely shredded cabbage
2 medium
apples
1 small
carrot
1 tsp
minced onion
1 tsp
minced dill or parsley
2 Tbsp
mayonnaise
1 tsp
sugar
1/2 c
sour cream

How to Make RUSSIAN COLE SLAW

Step-by-Step

  • 1Sprinkle the shredded cabbage with salt and let stand 15 minutes, then scald for 3 minutes. Drain well and dry in a towel.
  • 2Chop the apples very fine or grate them on a coarse grater. Grate the carrot.
  • 3Mix all the ingredients together and let stand 30 minutes on ice (or in refrigerator) before serving.
