This is a hearty salad, perfect for warm spring and hot summer days. Cook time for rice is not included and chill time is not included.

Ingredients

  • 1 cup smoked turkey, diced
  • 3 cups cooked long grain rice
  • 1/2 cup sweet red or yellow bell pepper, diced
  • 1/2 cup zucchini, diced
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup ripe olives, chopped
  • 1/4 cup fresh parsley, minced (i like to use cilantro)
  • 3 tablespoons red wine vinegar
  • 1 tablespoon green peppercorns
  • 1 teaspoon dijon mustard
  • 1/2 cup plus 1 tablespoon olive oil

How To Make rice salad with green peppercorn dressing and smok

  • Step 1
    Combine the first 7 ingredients in a bowl. Mix gently. Set aside.
  • Step 2
    Combine the vinegar, peppercorns, and mustard in a mini food processor; process for 30 seconds, stopping once to scrape down the sides.
  • Step 3
    Gradually add the olive oil and process until blended. Pour the dressing over the rice mixture, and mix gently.
  • Step 4
    Cover and chill.
