Ingredients For rice salad with green peppercorn dressing and smok

  • 1 c
    smoked turkey, diced
  • 3 c
    cooked long grain rice
  • 1/2 c
    sweet red or yellow bell pepper, diced
  • 1/2 c
    zucchini, diced
  • 1/2 c
    cheddar cheese, shredded
  • 1/2 c
    ripe olives, chopped
  • 1/4 c
    fresh parsley, minced (i like to use cilantro)
  • 3 Tbsp
    red wine vinegar
  • 1 Tbsp
    green peppercorns
  • 1 tsp
    dijon mustard
  • 1/2 c
    plus 1 tablespoon olive oil

How To Make rice salad with green peppercorn dressing and smok

    Combine the first 7 ingredients in a bowl. Mix gently. Set aside.

    Combine the vinegar, peppercorns, and mustard in a mini food processor; process for 30 seconds, stopping once to scrape down the sides.

    Gradually add the olive oil and process until blended. Pour the dressing over the rice mixture, and mix gently.

    Cover and chill.
