Ingredients
- 1 cup smoked turkey, diced
- 3 cups cooked long grain rice
- 1/2 cup sweet red or yellow bell pepper, diced
- 1/2 cup zucchini, diced
- 1/2 cup cheddar cheese, shredded
- 1/2 cup ripe olives, chopped
- 1/4 cup fresh parsley, minced (i like to use cilantro)
- 3 tablespoons red wine vinegar
- 1 tablespoon green peppercorns
- 1 teaspoon dijon mustard
- 1/2 cup plus 1 tablespoon olive oil
How To Make rice salad with green peppercorn dressing and smok

Step 1Combine the first 7 ingredients in a bowl. Mix gently. Set aside.

Step 2Combine the vinegar, peppercorns, and mustard in a mini food processor; process for 30 seconds, stopping once to scrape down the sides.

Step 3Gradually add the olive oil and process until blended. Pour the dressing over the rice mixture, and mix gently.
