rainbow salad wrap

It's been recommended that you try to eat a rainbow of foods every day, as each color contains powerful nutrients our bodies need to function at optimal levels. This wrap is a fun, colorful way to incorporate lots of your veggie servings for the day and also a sure way that you're getting at least a little bit of every color! I have one for lunch every day! Substitute turkey or a salmon filet...any lean protein you want for the middle if it gets boring! (*note- the amounts are all up to you- I like my tortilla absolutely BURSTING with veggies that fall out onto the plate, so when I'm done with the wrap there's always a little bit of the yummy insides to finish up, but I know some people like a little less- do what works for YOU!

Ingredients
- 1 - whole wheat or multi-grain tortilla
- BIG bunch spinach, fresh
- 1/4 - 1/2 - yellow bell pepper
- 1/4 - 1/2 - orange bell pepper
- 8-12 - grape tomatoes
- 2-3 ounces tuna
- 1/4 - 1/2 cup blueberries
- 1/4 - 1/2 cup fresh red seedless grapes
- drizzle tablespoon honey mustard and/or light ranch
- 1/2 - large carrot, sliced
How To Make rainbow salad wrap

Step 1Prepare tuna. (I like to do a couple of cans in a re-sealable container so it's ready for the next day(s) too! I like to make it with olive oil, lemon and pepper.

Step 2Slice peppers into thin strips (also, if you don't like how it all sticks out, try dicing up the peppers and mixing in with the tuna!)

Step 3Quarter grape tomatoes and slice up carrot however you want it.

Step 4Place all ingredients (except blueberries and grapes) on middle of tortilla... the order I usually do (not a mandatory thing) is: a big ol' handful (or two) of spinach, then the tuna, peppers, dressing on top of that, and finish with tomatoes and carrots.

Step 5Mix blueberries and grapes in small dish and enjoy on the side of your filling, vitamin-packed wrap~ Voila~ a rainbow lunch to enjoy!!
