·1 lb radishes, trimmed, thinly sliced,
·1/4 cup fresh mint, finely chopped
·1/2 cup orange juice, freshly squeezed
·1/4 cup lemon juice, freshly squeezed
·1/4 cup finely chopped cilantro
·1/2 jalapeño chile, fresh, finely chopped (optional)
·1/4 tsp salt, or to taste
·1/8 tsp pepper, black freshly ground (or to taste)
·1/2 cup deep fried pork rinds (chicharrones), crumbled, (optional)
How to Make Radish Salad
- Combine all ingredients and chill for at least 3 hours before serving. The longer it sits the more the flavors will blend.
If desired, you may add 1/4 cup crumbled chicharrones to the salad before placing in the fridge to chill, then add another 1/4 cup just before serving, for texture.
