This refreshing, crunchy and delicious side salad, can be treated like a condiment. You can use this tasty salad as a topping for many dishes. I hope you will enjoy.

Ingredients

  • - 1 lb radishes, trimmed, thinly sliced,
  • - 1/4 cup fresh mint, finely chopped
  • - 1/2 cup orange juice, freshly squeezed
  • - 1/4 cup lemon juice, freshly squeezed
  • - 1/4 cup finely chopped cilantro
  • - 1/2 jalapeño chile, fresh, finely chopped (optional)
  • - 1/4 tsp salt, or to taste
  • - 1/8 tsp pepper, black freshly ground (or to taste)
  • - 1/2 cup deep fried pork rinds (chicharrones), crumbled, (optional)

How To Make radish salad

  • Step 1
    Combine all ingredients and chill for at least 3 hours before serving. The longer it sits the more the flavors will blend.
  • Step 2
    Note: If desired, you may add 1/4 cup crumbled chicharrones to the salad before placing in the fridge to chill, then add another 1/4 cup just before serving, for texture.
