My entire family and many coworkers love this salad. It has many textures and flavors that blend well. We have many special diet needs at home and work. Diabetics, vegans, picky eaters, this seems to please them all.

Ingredients
- 1 cup quinoa, cooked
- 1 small red bell pepper
- 1 small red onion
- 1 bunch cilantro, fresh
- 1 cup corn kernels, frozen
- 3 sticks celery stalks
- 1 cup edamame
- 1/2 cup feta cheese
- DRESSING
- 1/4 cup olive oil, light
- 1/4 teaspoon crushed garlic
- 2 tablespoons lime juice
- 1 dash salt and pepper
How To Make quinoa salad

Step 1Cook quinoa according to directions and allow to cool.

Step 2Finely chop red bell pepper, red onion, celery stalks and cilantro into a large bowl

Step 3Add corn and edamame, toss in bowl with rest of vegies and add quinoa.

Step 4Mix olive oil, garlic and lime juice together very well. Salt and pepper to taste.

Step 5Pour dressing over salad and mix. Place in fridge until chilled.
