I love this refreshing, salad chilled, all the wonderful flavors pop and sing in your mouth. Who knew, this would taste so great. The fragrant herbs, crunchy peanuts, fish sauce and fresh lime juice add a wonderful depth of flavor to the dish creating a perfect balance of sweet, sour, salty and hot.

Ingredients For quick chicken & herb salad

  • SALAD DRESSING
  • 1
    fresh, thai bird's eye chili, seeded and finely minced
  • 1 clove
    large, garlic, peeled and minced
  • 2
    green onions, thinly sliced
  • 1/8 c
    fresh thai basil, finely chopped
  • 1/8 c
    fresh cilantro, finely chopped
  • 1 1/2 - 2 Tbsp
    white sugar
  • pinch
    salt
  • pinch
    black pepper
  • 1 Tbsp
    rice vinegar
  • 2 1/2 - 3 Tbsp
    lime juice, fresh squeezed
  • 1 - 2 Tbsp
    fish sauce
  • 2 1/2 - 3 Tbsp
    vegetable oil
  • SALAD
  • 2 c
    leftover chicken, shredded
  • 2 c
    cabbage, shredded
  • 1/4 c
    onion, finely shredded
  • 2 -3 sm
    carrot, grated
  • 1/4 c
    fresh mint, finely chopped
  • 2 - 4 Tbsp
    roughly chopped salted peanuts, garnish

How To Make quick chicken & herb salad

    Salad Dressing: In a small bowl, combine all the salad dressing ingredients, mixing well. Taste the dressing to see if it needs more seasonings, adjust if necessary and then set aside until needed.

    Next, add the salad ingredients and salad dressing to a large bowl and toss together, then garnish with peanuts and serve.

    This salad is wonderful when served either chilled or at room temperature.
