I love this refreshing, salad chilled, all the wonderful flavors pop and sing in your mouth. Who knew, this would taste so great. The fragrant herbs, crunchy peanuts, fish sauce and fresh lime juice add a wonderful depth of flavor to the dish creating a perfect balance of sweet, sour, salty and hot.

Ingredients

  • SALAD DRESSING
  • 1 fresh, thai bird's eye chili, seeded and finely minced
  • 1 clove large, garlic, peeled and minced
  • 2 green onions, thinly sliced
  • 1/8 cup fresh thai basil, finely chopped
  • 1/8 cup fresh cilantro, finely chopped
  • 1 1/2 - 2 tablespoons white sugar
  • pinch salt
  • pinch black pepper
  • 1 tablespoon rice vinegar
  • 2 1/2 - 3 tablespoons lime juice, fresh squeezed
  • 1 - 2 tablespoons fish sauce
  • 2 1/2 - 3 tablespoons vegetable oil
  • SALAD
  • 2 cups leftover chicken, shredded
  • 2 cups cabbage, shredded
  • 1/4 cup onion, finely shredded
  • 2 -3 small carrot, grated
  • 1/4 cup fresh mint, finely chopped
  • 2 - 4 tablespoons roughly chopped salted peanuts, garnish

How To Make quick chicken & herb salad

  • Step 1
    Salad Dressing: In a small bowl, combine all the salad dressing ingredients, mixing well. Taste the dressing to see if it needs more seasonings, adjust if necessary and then set aside until needed.
  • Step 2
    Next, add the salad ingredients and salad dressing to a large bowl and toss together, then garnish with peanuts and serve.
  • Step 3
    This salad is wonderful when served either chilled or at room temperature.
