presto spinach salad
I found this recipe on another website and have made it twice. My husband has never particularly cared for dried cranberries, but he loves this salad and has decided the cranberries aren't so bad after all. LOL!

Ingredients
- 1/3 cup olive oil
- 3 tablespoons sugar
- 2 tablespoons white wine vinegar
- 2 tablespoons sour cream
- 1/2 teaspoon dry mustard
- 1 package (6 oz.) spinach, washed and dried
- 1/2 cup chopped walnuts, toasted
- 1/2 cup dried cranberries
- 1/3 cup goat cheese, crumbled (optional)
How To Make presto spinach salad

Step 1In a shaker jar combine the oil, sugar, vinegar, sour cream and mustard. Shake well.

Step 2Divide spinach among four salad plates. Drizzle with dressing. Sprinkle wit the walnuts, cranberries and goat cheese (if desired).

Step 3Notes: • the original recipe says the goat cheese is optional, but in my opinion, it really makes the salad. • I used lite sour cream and it was fine.
