presto spinach salad

I found this recipe on another website and have made it twice. My husband has never particularly cared for dried cranberries, but he loves this salad and has decided the cranberries aren't so bad after all. LOL!

Ingredients For presto spinach salad

  • 1/3 c
    olive oil
  • 3 Tbsp
    sugar
  • 2 Tbsp
    white wine vinegar
  • 2 Tbsp
    sour cream
  • 1/2 tsp
    dry mustard
  • 1 pkg
    (6 oz.) spinach, washed and dried
  • 1/2 c
    chopped walnuts, toasted
  • 1/2 c
    dried cranberries
  • 1/3 c
    goat cheese, crumbled (optional)

How To Make presto spinach salad

    In a shaker jar combine the oil, sugar, vinegar, sour cream and mustard. Shake well.

    Divide spinach among four salad plates. Drizzle with dressing. Sprinkle wit the walnuts, cranberries and goat cheese (if desired).

    Notes: • the original recipe says the goat cheese is optional, but in my opinion, it really makes the salad. • I used lite sour cream and it was fine.
