Presto Spinach Salad
1/3 colive oil
2 Tbspwhite wine vinegar
2 Tbspsour cream
1/2 tspdry mustard
1 pkg(6 oz.) spinach, washed and dried
1/2 cchopped walnuts, toasted
1/2 cdried cranberries
1/3 cgoat cheese, crumbled (optional)
How to Make Presto Spinach Salad
- In a shaker jar combine the oil, sugar, vinegar, sour cream and mustard. Shake well.
- Divide spinach among four salad plates. Drizzle with dressing. Sprinkle wit the walnuts, cranberries and goat cheese (if desired).
• the original recipe says the goat cheese is optional, but in my opinion, it really makes the salad.
• I used lite sour cream and it was fine.
