A variation on the classic TABOULI Salad by using 1/2 PARsley and 1/2 KAle ala PARKABOULI. I make even healthier by adding 1/2 teaspoon of Turmeric.

Ingredients

  • 1 cup chopped kale
  • 1 cup chopped parsley
  • 1 bunch chopped scallions
  • 2 medium chopped fresh tomatoes
  • 4 bunches chopped radish
  • 2 medium chopped celery sticks
  • 1 medium chopped cucumber
  • 1 cup lemon juice
  • 1/2 cup ev olive oil
  • 1 pinch salt to taste
  • 1 pinch pepper to taste
  • 1 pinch turmeric
  • 1 cup soaked and drained cracked bulgar wheat

How To Make parkabouli

  • Step 1
    Soak Bulgar Wheat in water to start
  • Step 2
    Chop all other ingredients as seen in photo
  • Step 3
    Add Salt, Pepper, Turmeric, Lemon Juice, Oil and mix thoroughly then drain Bulgar Wheat and add and mix
