I loved it when my mom used to make this in the summertime. This is approximately how she made it.

Ingredients

  • 1 1/2 cups kidney beans, rinsed and drained (1 can)
  • 1/3 cup celery, finely chopped
  • 1/4 cup onion, finely chopped
  • 1/4 cup mayonnaise (light is ok)
  • 1/2 tablespoon sugar
  • 1 tablespoon vinegar
  • 1/2 - 1 teaspoons salt (or to taste)
  • 1/8 - 1/4 teaspoon pepper (or to taste)

How To Make mom's kidney bean salad

  • Step 1
    Put rinsed and drained kidney beans (either light or dark) into a bowl.
  • Step 2
    Gently stir in rest of the ingredients. I would use the smaller amount of salt and pepper, taste, and then adjust.
  • Step 3
    Let chill for an hour before serving.
