mom's kidney bean salad

I loved it when my mom used to make this in the summertime. This is approximately how she made it.

Ingredients For mom's kidney bean salad

  • 1 1/2 c
    kidney beans, rinsed and drained (1 can)
  • 1/3 c
    celery, finely chopped
  • 1/4 c
    onion, finely chopped
  • 1/4 c
    mayonnaise (light is ok)
  • 1/2 Tbsp
    sugar
  • 1 Tbsp
    vinegar
  • 1/2 - 1 tsp
    salt (or to taste)
  • 1/8 - 1/4 tsp
    pepper (or to taste)

How To Make mom's kidney bean salad

  • 1
    Put rinsed and drained kidney beans (either light or dark) into a bowl.
  • 2
    Gently stir in rest of the ingredients. I would use the smaller amount of salt and pepper, taste, and then adjust.

    Let chill for an hour before serving.
