Ingredients
- 1 1/2 pounds brussel sprouts, finely shredded
- 1/3 cup uncle gary's gourmet peppers
- 1/2 cup mini colorful peppers, julienned
- 1/4 small red onion, chopped
- 2 - garlic colves, minced
- 2 tablespoons cilantro, chopped
- 4 ounces queso fresco, crumbled
- MEXICAN DRESSING
- 2/3 cup mayonnaise-more if needed
- 1 teaspoon cumin
- 1/2 teaspoon chipotle chili powder
- 1 1/2 teaspoons smoked sea salt-to taste
- 1 teaspoon brown sugar
- - zest and juice of 1 lime

Step 1Combine ingredients 1-6 in a mixing bowl. Mix dressing ingredients in a small mixing bowl and add to veggies. Mix well and chill for at least 1 hour. When ready to serve, top with queso fresco. **adjust seasoning to taste**
