Ingredients

  • 1 1/2 pounds brussel sprouts, finely shredded
  • 1/3 cup uncle gary's gourmet peppers
  • 1/2 cup mini colorful peppers, julienned
  • 1/4 small red onion, chopped
  • 2 - garlic colves, minced
  • 2 tablespoons cilantro, chopped
  • 4 ounces queso fresco, crumbled
  • MEXICAN DRESSING
  • 2/3 cup mayonnaise-more if needed
  • 1 teaspoon cumin
  • 1/2 teaspoon chipotle chili powder
  • 1 1/2 teaspoons smoked sea salt-to taste
  • 1 teaspoon brown sugar
  • - zest and juice of 1 lime

How To Make mexican brussels sprout slaw

  • Step 1
    Combine ingredients 1-6 in a mixing bowl. Mix dressing ingredients in a small mixing bowl and add to veggies. Mix well and chill for at least 1 hour. When ready to serve, top with queso fresco. **adjust seasoning to taste**
