Not a slaw, not a chopped salad- this very simply dressed salad is the perfect accompaniment to Mediterranean foods.

  • 12 oz
    finely shredded red cabbage
  • 1 Tbsp
    fresh rosemary, minced
  • 2 Tbsp
    balsamic vinegar
  • 2 Tbsp
    white balsamic vinegar
  • 3 Tbsp
    olive oil
  • 2 Tbsp
  • ·
    salt and pepper
  • 1/4 c
    fresh pomegranate arils (seeds)
  • 1/2 c
    chopped candied walnuts
  • 2 oz
    crumbled goat cheese

How to Make Mediterranean Red Cabbage Salad


  1. Toss together ingredients except goat cheese and chill several hours or overnight.
  2. Serve with a little crumbled goat cheese on top.
