Not a slaw, not a chopped salad- this very simply dressed salad is the perfect accompaniment to Mediterranean foods.

Ingredients

  • 12 ounces finely shredded red cabbage
  • 1 tablespoon fresh rosemary, minced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons white balsamic vinegar
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • - salt and pepper
  • 1/4 cup fresh pomegranate arils (seeds)
  • 1/2 cup chopped candied walnuts
  • 2 ounces crumbled goat cheese

How To Make mediterranean red cabbage salad

  • Step 1
    Toss together ingredients except goat cheese and chill several hours or overnight.
  • Step 2
    Serve with a little crumbled goat cheese on top.
