Mediterranean Chickpea Salad

1 can(s)low sodium chickpeas, drained and rinsed

1/2 ptcherry tomatoes, quartered

1cucumber, seeded and chopped

4 ozmozzarella cheese, cubed

1/4 cred onion, finely chopped

1 Tbsplemon juice

1/4 colive oil, extra virgin
How to Make Mediterranean Chickpea Salad
- In med. mixing bowl, gently stir together chickpeas, tomatoes, cucumbers, cheese, onions and parsley until combined; set aside. In separate med. bowl, stir together lemon juice and olive oil, whisking constantly until oil is well incorporated. Toss Olive oil-lemon dressing with reserved veggies until coated completely. Serve chilled or at room temperature.
