Ingredients

  • 1 can low sodium chickpeas, drained and rinsed
  • 1/2 pint cherry tomatoes, quartered
  • 1 - cucumber, seeded and chopped
  • 4 ounces mozzarella cheese, cubed
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon lemon juice
  • 1/4 cup olive oil, extra virgin

How To Make mediterranean chickpea salad

  • Step 1
    In med. mixing bowl, gently stir together chickpeas, tomatoes, cucumbers, cheese, onions and parsley until combined; set aside. In separate med. bowl, stir together lemon juice and olive oil, whisking constantly until oil is well incorporated. Toss Olive oil-lemon dressing with reserved veggies until coated completely. Serve chilled or at room temperature.
