Delicious salad when you want something a little different.

Ingredients

  • 2 bunches fresh kale,stems removed
  • 1/2 cup parmigiano-reggiano, grated
  • 1/3 cup olive oil, extra virgin
  • 1/4 cup lemon juice, fresh
  • 3 cloves minced garlic
  • 1 tablespoon soy sauce, low sodium
  • 1/2 teaspoon anchovy paste or 1 filet diced fine
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon salt,(optional)
  • 1 1/2 tablespoons sesame seeds toasted

How To Make massaged kale salad

  • Step 1
    Tear the kale leaves into bite size pieces,rinse with cold water and drain well,pat dry if needed.
  • Step 2
    Combine all of the other ingredients in a large enough bowl to hold everything. Whisk the dressing first,then add the kale and massage the dressing into the kale using your hands until it reduces to about half.
  • Step 3
    Serve with warm pita bread slices and freshly shaved Parmesan cheese,enjoy!!! :)
