I created this recipe after watching one of my nephews this summer make his tomato and onion dish flavored with olive oil, salt and pepper and basil. This just takes the dish to another level with additional flavors. It's a huge hit with family and friends! Since tomatoes are really fruits and not a veggie, it is listed as a fruit dish.

Ingredients

  • 4 - larg tomatoes, quartered
  • 1/3 cup olive oil
  • 1/4 cup good red wine vinegar
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • 2 teaspoons fresh chopped parsley
  • 2 teaspoons fresh chopped basil
  • 1 - white onion, thinly sliced

How To Make marinated tomatoes ilalia

  • Step 1
    Put quartered tomatoes and sliced onions in a large bowl and set aside.
  • Step 2
    In a small bowl, whisk together the remaining ingredients until the salt dissolves. Pour over the tomatoes and onions.
  • Step 3
    Toss everything so flavors can marry. Cover and marinate in refrigerator for several hours or even overnight.
