A lovely tangy salad that is perfect for a quick lunch that you can feel good about.

Ingredients

  • 2 cups arugula/spinach mix
  • 4 ounces salmon filet
  • 1 dash salt
  • 1 dash pepper
  • 1/4 cup almonds, chopped
  • 1 - small orange, sectioned
  • 1 - lemon, juiced
  • 2 dashes salt and pepper
  • 1 teaspoon olive oil

How To Make lemon salmon salad

  • Step 1
    Prepare salmon on stovetop. I just seasoned mine with a little salt and pepper. Cook for about ten minutes, flipping halfway through.
  • Step 2
    On a plate, add lettuce, orange, and almonds.
  • Step 3
    In a small bowl, stir together lemon juice olive oil, salt, and pepper.
  • Step 4
    Once salmon is cooked, chop and add to salad. Drizzle lemon juice mixture over top of salad and toss.
