We love legumes and just about any kind of bean....also love curry so this is a fav of ours..this is also a heart smart recipe....this is the year for "No excuses"!!We eat great but we r going to do better!!

Ingredients

  • 1 can 15 oz black eyed peas drained and rinsed well
  • 1 can 11 oz no-salt added corn rinsed and drained
  • 1/2 cup chopped red onion
  • 1/2 cup thinly sliced celery about 2 stalks
  • 1 teaspoon finely shredded lemon peel
  • DRESSING
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon water
  • 1 teaspoon olive oil, extra virgin
  • 1 clove minced garlic
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon dijon mustard
  • 1/8 teaspoon fresh pepper

How To Make lemon-curried black-eyed pea salad

  • Step 1
    In a medium bowl, combine salad ingredients. set aside. Mix dressing in a jar or blender and shake or blend. Pour dressing over salad and stir until well coated. Refrigerate for 1-24 hours.Delicious!
