We love legumes and just about any kind of bean....also love curry so this is a fav of ours..this is also a heart smart recipe....this is the year for "No excuses"!!We eat great but we r going to do better!!

Ingredients
- 1 can 15 oz black eyed peas drained and rinsed well
- 1 can 11 oz no-salt added corn rinsed and drained
- 1/2 cup chopped red onion
- 1/2 cup thinly sliced celery about 2 stalks
- 1 teaspoon finely shredded lemon peel
- DRESSING
- 2 tablespoons fresh lemon juice
- 1 tablespoon water
- 1 teaspoon olive oil, extra virgin
- 1 clove minced garlic
- 1/2 teaspoon curry powder
- 1/2 teaspoon dijon mustard
- 1/8 teaspoon fresh pepper
How To Make lemon-curried black-eyed pea salad

Step 1In a medium bowl, combine salad ingredients. set aside. Mix dressing in a jar or blender and shake or blend. Pour dressing over salad and stir until well coated. Refrigerate for 1-24 hours.Delicious!
