We love legumes and just about any kind of bean....also love curry so this is a fav of ours..this is also a heart smart recipe....this is the year for "No excuses"!!We eat great but we r going to do better!!

Ingredients

15 oz black eyed peas drained and rinsed well
1 can(s)
11 oz no-salt added corn rinsed and drained
1/2 c
chopped red onion
1/2 c
thinly sliced celery about 2 stalks
1 tsp
finely shredded lemon peel

DRESSING

2 Tbsp
fresh lemon juice
1 Tbsp
water
1 tsp
olive oil, extra virgin
1 clove
minced garlic
1/2 tsp
curry powder
1/2 tsp
dijon mustard
1/8 tsp
fresh pepper

How to Make Lemon-Curried Black-Eyed Pea Salad

  • 1In a medium bowl, combine salad ingredients. set aside. Mix dressing in a jar or blender and shake or blend. Pour dressing over salad and stir until well coated. Refrigerate for 1-24 hours.Delicious!
