Objection, your Honor! Isn't coleslaw a notorious fat offender because it's dripping with mayo? Objection overruled! This particular coleslaw is a slaw with a "Lean Attitude". The Verdict is in: Not Guilty!!!

Ingredients

5 c
coarsly shredded green cabbage
2 c
coarsly shredded red cabbage
1 c
grated carrot
3/4 c
thinly sliced celery
1/4 c
vinegar
1/4 c
sugar
1 Tbsp
canola oil
1 Tbsp
dijon mustard
1 tsp
celery seed
1/4 tsp
salt
1/4 tsp
pepper

Step-By-Step

1Place first four ingredients in a very large bowl and toss until well mixed.
2To prepare dressing, combine vinegar,sugar,oil,dijon mustard, celery seeds, salt and pepper in a small saucepan. Heat over medium-high heat until mixture comes to a boil and sugar dissolves.
3Add to cabbage mixture and stir until well blended. Cover and chill at least 2 hours before serving. Preferably overnight. Enjoy!
