These are not the easiest to eat, but these Keto friendly sandwiches are really good! The cucumber acting as bread is a great alternative. Swiss and turkey is a classic deli sandwich combination that's delicious with the zingy mayo/mustard mixture. The whole little sandwich makes you forget about watching carbs.   • 3 large
    cucumbers, peeled
  • 6 slice
    deli turkey meat
  • 6 slice
    Swiss cheese
  • 1 large
  • 2 Tbsp
  • 1 Tbsp
    Dijon mustard

How to Make Keto Friendly Low Carb Cucumber Sandwiches


  1. Cut the peeled cucumbers in half. Then cut each half in half again lengthwise. With a spoon scrape out the seeds.
  2. Mix the mayonnaise and mustard together.
  3. Cut the tomato in half and slice each half into 6 slices (so you have a total of 12 slices).
  4. Take one cucumber and add the spread with mustard mixture.
  5. Top with one slice of turkey, cheese, and 2 slices tomato.
  6. Spread more mustard mixture on another cucumber and place on top. Continue until all ingredients are used. You will have 6 sandwiches.
