One of my friends made a similar salad for a potluck and it was delicious! I've made a few changes and ended up with this.

Ingredients

1 1/4 c
couscous or quinoa
1 1/4 c
hot vegetable stock
1/2 lb
cherry tomatoes
1/2
cucumber
2 Tbsp
olive oil
1 large
lemon zest and juice
1 small
red onion, thinly sliced
1 1/4 c
feta cheese
1 bunch
basil chopped (may use mint instead for different flavor)

How to Make Jewel Couscous/or Quinoa Salad

Step-by-Step

  • 1Place couscous in a large bowl and pour over the hot stock. Leave for 5 minutes until liquid has been absorbed. Allow to cool completely.
  • 2cut cherry tomatoes in half. Half the cucumber lengthwise and scoop out seeds with spoon, then cut into pieces.
  • 3Stir the lemon juice, zest, olive oil together. Add tomatoes, cucumbers, basil, to couscous mixture. Salt and pepper to taste.
