1 1/4 ccouscous or quinoa
1 1/4 chot vegetable stock
1/2 lbcherry tomatoes
2 Tbspolive oil
1 largelemon zest and juice
1 smallred onion, thinly sliced
1 1/4 cfeta cheese
1 bunchbasil chopped (may use mint instead for different flavor)
How to Make Jewel Couscous/or Quinoa Salad
- Place couscous in a large bowl and pour over the hot stock. Leave for 5 minutes until liquid has been absorbed. Allow to cool completely.
- cut cherry tomatoes in half. Half the cucumber lengthwise and scoop out seeds with spoon, then cut into pieces.
- Stir the lemon juice, zest, olive oil together. Add tomatoes, cucumbers, basil, to couscous mixture. Salt and pepper to taste.
