jewel couscous/or quinoa salad
One of my friends made a similar salad for a potluck and it was delicious! I've made a few changes and ended up with this.

Ingredients
- 1 1/4 cups couscous or quinoa
- 1 1/4 cups hot vegetable stock
- 1/2 pound cherry tomatoes
- 1/2 - cucumber
- 2 tablespoons olive oil
- 1 large lemon zest and juice
- 1 small red onion, thinly sliced
- 1 1/4 cups feta cheese
- 1 bunch basil chopped (may use mint instead for different flavor)
How To Make jewel couscous/or quinoa salad

Step 1Place couscous in a large bowl and pour over the hot stock. Leave for 5 minutes until liquid has been absorbed. Allow to cool completely.

Step 2cut cherry tomatoes in half. Half the cucumber lengthwise and scoop out seeds with spoon, then cut into pieces.

Step 3Stir the lemon juice, zest, olive oil together. Add tomatoes, cucumbers, basil, to couscous mixture. Salt and pepper to taste.
