One of my friends made a similar salad for a potluck and it was delicious! I've made a few changes and ended up with this.

Ingredients For jewel couscous/or quinoa salad

  • 1 1/4 c
    couscous or quinoa
  • 1 1/4 c
    hot vegetable stock
  • 1/2 lb
    cherry tomatoes
  • 1/2
  • 2 Tbsp
    olive oil
  • 1 lg
    lemon zest and juice
  • 1 sm
    red onion, thinly sliced
  • 1 1/4 c
    feta cheese
  • 1 bunch
    basil chopped (may use mint instead for different flavor)

How To Make jewel couscous/or quinoa salad

  • 1
    Place couscous in a large bowl and pour over the hot stock. Leave for 5 minutes until liquid has been absorbed. Allow to cool completely.

    cut cherry tomatoes in half. Half the cucumber lengthwise and scoop out seeds with spoon, then cut into pieces.

    Stir the lemon juice, zest, olive oil together. Add tomatoes, cucumbers, basil, to couscous mixture. Salt and pepper to taste.
