A good recipe for summer! Why the name? I don't know. This was a friend's mother's recipe and she doesn't know either. One thing for sure. It's loved by all and also makes a great covered dish!

Ingredients

  • 1 3/4 cups cold cooked corn, cut from the cob
  • 1 - medium cucumber, diced
  • 1 - medium green pepper, diced
  • 1 - medium mild onion, diced
  • 1 - large tomato, diced
  • 1/2 cup celery, diced
  • - 1/2-3/4 c. mayonnaise or salad dressing
  • - salt and pepper to taste

How To Make indian corn salad

  • Step 1
    Place all vegetables in a large bowl. Slowly add mayonnaise until you have desired amount. Add salt and pepper to taste. Mix well.
  • Step 2
    Spoon into pretty glass dish, cover, and chill at least 2 hours before serving.
