Horitiki is also known as a Village Salad. It's the most famous salad in Greece. No lettuce. Ever. Some people in our family don't use the vinegar, instead mixing the olive oil with a bit of water.

Ingredients

  • 1 large ripe tomato, cut into wedges then halved
  • 1 medium cucumber, cut in 1/2 inch half-moons
  • 1/4 cup red onion, thinly sliced
  • 1/2 small green bell pepper, thinly sliced
  • 8 kalamata olives, whole
  • 2 ounces feta cheese, cut in 2 thick slices
  • 1 tablespoon red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • dried greek oregano
  • salt and freshly ground pepper, to taste

How To Make horiatiki - the real greek salad

  • Step 1
    Combine the tomato, cucumber, red onion and green pepper in a bowl. Add the red wine vinegar and toss gently to combine.
  • Step 2
    Add the olive oil, salt and pepper, to taste, then toss gently until incorporated. Add the Kalamata olives. Sprinkle the salad with a little oregano.
  • Step 3
    Divide the salad between two shallow bowls. Place a piece of feta on top of each and sprinkle the feta with oregano and another drizzle of olive oil. Season to taste with salt and pepper, if needed.
  • Step 4
    Note: Most often we don't plate this individually, and everyone just uses their forks to help themselves. We also take thick crusty bread and dip it in the oil & vinegar dressing that goes to the bottom of the bowl.
