honest coleslaw
In looking for authentic NY Deli coleslaw, I found a lot of controversy as to whether mayo is or is not acceptable. This one comes from the Pro-Mayo group! (Based on Mitch Weinstein's Honest Cooking blog.)

Ingredients
- 1 bag red and green cabbage mix, with carrots
- 1 tablespoon Kosher salt (2 t. or less if using table salt!)
- 1/4 cup mayonnaise
- 1/8 cup vinegar (rice wine, white wine - use a good vinegar)
- 1 tablespoon sugar
- 1/4 teaspoon celery seed
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon chopped parsley
How To Make honest coleslaw

Step 1Toss cabbage mixture with salt in a colander. Cover the colander with a plate and put a heavy can on top. Let it sit for a good 3 - 4 hours, then squeeze dry.

Step 2Squeeze cabbage dry with a clean towel, toss with dressing.
