My mother used to say that the best part of a Ham during the holiday's was the ham salad she made from the left overs. I have to say I am inclined to agree with her. I only make this at Thanksgiving, Christmas and Easter when we typically cook a ham. I do get enough to freeze enough ham to make it in the mean time. This ham salad is good anytime of the year and even though I prefer it on a sandwich of white or wheat bread, it is great on crackers as well. I hope you enjoy it as much as I enjoy eating it!

Ingredients For ham salad

  • 1 1/2 c
    ham, chopped finely
  • 2 lg
    boiled eggs, chopped finely
  • 2
    celery stalks, chopped finely
  • 1/2 md
    yellow onion, chopped finely
  • 1/2 c
    mayonnaise
  • 1/4 c
    sweet pickle relish
  • salt and pepper to taste

How To Make ham salad

  • 1
    In a medium bowl mash eggs with back of spoon. Add salt & pepper to taste
  • 2
    Stir in finely chopped onions, pickle relish, celery and mayonnaise. Mix well
  • 3
    Add ham that has been chopped with a food processor until very fine. Serve on bread or crackers.
