ham salad
My mother used to say that the best part of a Ham during the holiday's was the ham salad she made from the left overs. I have to say I am inclined to agree with her. I only make this at Thanksgiving, Christmas and Easter when we typically cook a ham. I do get enough to freeze enough ham to make it in the mean time. This ham salad is good anytime of the year and even though I prefer it on a sandwich of white or wheat bread, it is great on crackers as well. I hope you enjoy it as much as I enjoy eating it!

Makes about 6 sandwiches
Ingredients
- 1 1/2 cups ham, chopped finely
- 2 large boiled eggs, chopped finely
- 2 - celery stalks, chopped finely
- 1/2 medium yellow onion, chopped finely
- 1/2 cup mayonnaise
- 1/4 cup sweet pickle relish
- - salt and pepper to taste
How To Make ham salad

Step 1In a medium bowl mash eggs with back of spoon. Add salt & pepper to taste

Step 2Stir in finely chopped onions, pickle relish, celery and mayonnaise. Mix well

Step 3Add ham that has been chopped with a food processor until very fine. Serve on bread or crackers.
