Even though this is called ham salad, we usually use bologna or hotdogs. I got this recipe out of the United Methodists Women Cookbook of Oquawka, IL submitted by Alice Craig. I make 1/3 of this recipe for our family use; the full batch for a gathering.

Ingredients For ham salad

  • 3 lb
    minced or pressed ham, bologna, hotdogs; ground
  • 6
    hard boiled eggs; chopped
  • 2
    med green peppers; chopped
  • 2
    med onions; chopped
  • 1 pt
    mayo
  • 1 pt
    pickle relish (your preference sweet or dill)

How To Make ham salad

  • 1
    Grind meat, you can grind the peppers and onions too;but I prefer them chopped fine.
  • 2
    Chop the peppers and onions fine. Add to meat
  • 3
    Add: mayo and relish; mix well; chill over night or longer
  • 4
    Make sandwiches, but not too far in advance, this will make the bread soggy if made too early.
