Even though this is called ham salad, we usually use bologna or hotdogs. I got this recipe out of the United Methodists Women Cookbook of Oquawka, IL submitted by Alice Craig. I make 1/3 of this recipe for our family use; the full batch for a gathering.

Ingredients
- 3 pounds minced or pressed ham, bologna, hotdogs; ground
- 6 - hard boiled eggs; chopped
- 2 - med green peppers; chopped
- 2 - med onions; chopped
- 1 pint mayo
- 1 pint pickle relish (your preference sweet or dill)
How To Make ham salad

Step 1Grind meat, you can grind the peppers and onions too;but I prefer them chopped fine.

Step 2Chop the peppers and onions fine. Add to meat

Step 3Add: mayo and relish; mix well; chill over night or longer

Step 4Make sandwiches, but not too far in advance, this will make the bread soggy if made too early.
