Another refreshing cucumber salad, this one from my great-grandmother's recipe box. Her name was Augusta Eichorn and she moved to the US as a young bride.

cucumbers (about 2 pounds)
fresh dill
kosher salt
olive oil, extra virgin

How to Make Gurken Salat (German Cucumber Salad)


  • 1Peel cucumber with a vegetable peeler, peel and slice with a vegetable slicer into thin slices. Finely chop the dill and add to the beautiful cucumbers. Anything with 3 tablespoons sugar, 2 teaspoons salt, 6 tablespoons of vinegar, a little pepper and a dash of olive oil and season with infuse. Before serving, taste again.
  • 2This is just how she translated it to English for my grandmother.
