When we order chinese take out, we always end up with tons of leftover steamed white rice. This is a great way to use it up! Chill time is not included in the prep time.

Ingredients

  • 1 tablespoon plus 1 teaspoon vegetable oil
  • 1 cup celery, thinly sliced
  • 1 cup onion, minced
  • 1 small green bell pepper, cut into julienne strips
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 - 1/2 teaspoon pepper
  • 4 cups cooked long grain rice
  • 1 tablespoon soy sauce
  • 1 medium tomato, diced
  • 1 tablespoon fresh parsley, minced
  • 3 tablespoons green onion tops, chopped

How To Make fried rice salad

  • Step 1
    Heat oil in a large skillet or wok over medium-high heat; add celery and the next 5 ingredients, and stir-fry for 3 minutes.
  • Step 2
    Add the rice, and stir fry for 2 minutes. Remove from the heat and stir in the soy sauce.
  • Step 3
    Spoon the rice mixture into a serving bowl; cover and chill at least 3 hours. Top with tomato, parsley, and green onions just before serving.
