Ingredients

1 Tbspplus 1 teaspoon vegetable oil

1 ccelery, thinly sliced

1 conion, minced
-
1 smallgreen bell pepper, cut into julienne strips

1/2 tspsugar
-
1/2 tspsalt
-
1/4 - 1/2 tsppepper

4 ccooked long grain rice
-
1 Tbspsoy sauce
-
1 mediumtomato, diced
-
1 Tbspfresh parsley, minced

3 Tbspgreen onion tops, chopped
How to Make Fried Rice Salad
- Heat oil in a large skillet or wok over medium-high heat; add celery and the next 5 ingredients, and stir-fry for 3 minutes.
- Add the rice, and stir fry for 2 minutes. Remove from the heat and stir in the soy sauce.
- Spoon the rice mixture into a serving bowl; cover and chill at least 3 hours. Top with tomato, parsley, and green onions just before serving.
