When we order chinese take out, we always end up with tons of leftover steamed white rice. This is a great way to use it up! Chill time is not included in the prep time.

Ingredients
- 1 tablespoon plus 1 teaspoon vegetable oil
- 1 cup celery, thinly sliced
- 1 cup onion, minced
- 1 small green bell pepper, cut into julienne strips
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 - 1/2 teaspoon pepper
- 4 cups cooked long grain rice
- 1 tablespoon soy sauce
- 1 medium tomato, diced
- 1 tablespoon fresh parsley, minced
- 3 tablespoons green onion tops, chopped
How To Make fried rice salad

Step 1Heat oil in a large skillet or wok over medium-high heat; add celery and the next 5 ingredients, and stir-fry for 3 minutes.

Step 2Add the rice, and stir fry for 2 minutes. Remove from the heat and stir in the soy sauce.

Step 3Spoon the rice mixture into a serving bowl; cover and chill at least 3 hours. Top with tomato, parsley, and green onions just before serving.
