When we order chinese take out, we always end up with tons of leftover steamed white rice. This is a great way to use it up! Chill time is not included in the prep time.

Ingredients

1 Tbsp
plus 1 teaspoon vegetable oil
1 c
celery, thinly sliced
1 c
onion, minced
1 small
green bell pepper, cut into julienne strips
1/2 tsp
sugar
1/2 tsp
salt
1/4 - 1/2 tsp
pepper
4 c
cooked long grain rice
1 Tbsp
soy sauce
1 medium
tomato, diced
1 Tbsp
fresh parsley, minced
3 Tbsp
green onion tops, chopped

How to Make Fried Rice Salad

Step-by-Step

  • 1Heat oil in a large skillet or wok over medium-high heat; add celery and the next 5 ingredients, and stir-fry for 3 minutes.
  • 2Add the rice, and stir fry for 2 minutes. Remove from the heat and stir in the soy sauce.
  • 3Spoon the rice mixture into a serving bowl; cover and chill at least 3 hours. Top with tomato, parsley, and green onions just before serving.
