When we order chinese take out, we always end up with tons of leftover steamed white rice. This is a great way to use it up! Chill time is not included in the prep time.

  • 1 Tbsp
    plus 1 teaspoon vegetable oil
  • 1 c
    celery, thinly sliced
  • 1 c
    onion, minced
  • 1 small
    green bell pepper, cut into julienne strips
  • 1/2 tsp
  • 1/2 tsp
  • 1/4 - 1/2 tsp
  • 4 c
    cooked long grain rice
  • 1 Tbsp
    soy sauce
  • 1 medium
    tomato, diced
  • 1 Tbsp
    fresh parsley, minced
  • 3 Tbsp
    green onion tops, chopped

How to Make Fried Rice Salad


  1. Heat oil in a large skillet or wok over medium-high heat; add celery and the next 5 ingredients, and stir-fry for 3 minutes.
  2. Add the rice, and stir fry for 2 minutes. Remove from the heat and stir in the soy sauce.
  3. Spoon the rice mixture into a serving bowl; cover and chill at least 3 hours. Top with tomato, parsley, and green onions just before serving.
