Ingredients
- 5 cups quinoa, cooked (see basic recipe, link below in comment section)
- 1 cup chopped raw carots
- 3/4 cup parsley, minced
- 1 cup sunflower seed kernals
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup soy sauce, low sodium
- 1/2 cup lemon juice
- 1 small box cherry or grape tomatoes, halved (or amount to your liking)
- 1/4 cup black olives (or amount to your liking)
- - freshly ground black pepper to taste

Step 1Cook quinoa, let cool. Add carrots, parsley, sunflower seeds and garlic to quinoa. Mix thoroughly. Combine liquids, pour over quinoa and toss well. Garnish with tomato wedges and olives. Serves 6-8.
