fresh summer salad

This is a fresh little salad I like to make, with locally grown tomatoes and cucumbers. The parsley and chives come from my herb garden. I love this salad, it's so quick and easy to put together, and it tastes sooo good too!

Ingredients

  • 3 - roma tomatoes, seeded and cut into bite size pieces
  • 1/2 - of a cucumber, peeled and sliced into bite size pieces
  • 1/4 cup fresh chives, snipped small (i have also used green onions in place of chives)
  • 1/4 cup fresh parsley, chopped small
  • 1 clove garlic, pressed
  • - salt and pepper to taste
  • - olive oil

How To Make fresh summer salad

  • Step 1
    Mix the tomatoes, cucumber, chives, parsley, and garlic together. Season with salt and pepper.
  • Step 2
    Drizzle with olive oil. Mix well, and chill!
