My daughter-in-law found this wonderful salad and tweaked it a bit, then I tweaked it a bit more. The whole family loves the fresh light taste.

Ingredients
- 4 - ears fresh corn, husked
- 1 - lemon, squeezed
- 1 - lime, squeezed
- 2 - roma tomatoes, diced
- 1/2 small red onion, finely diced
- 2 cloves garlic, minced
- 1/2 bunch fresh cilantro, chopped
- pinch - salt and ground pepper
- 1/2 - bell pepper, diced
- 1/2 large english cucumber
How To Make fresh corn salad

Step 1Husk the corn and place in a plastic bag and cook on high for 10 minutes in the microwave. Cool enought to cut the kernals off into a large bowl.

Step 2Squeeze lemon and lime juice into the bowl along with the remaining ingredients. Mix well and chill for a couple of hours in the fridge.
