My daughter-in-law found this wonderful salad and tweaked it a bit, then I tweaked it a bit more. The whole family loves the fresh light taste.

Ingredients

  • 4 - ears fresh corn, husked
  • 1 - lemon, squeezed
  • 1 - lime, squeezed
  • 2 - roma tomatoes, diced
  • 1/2 small red onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 bunch fresh cilantro, chopped
  • pinch - salt and ground pepper
  • 1/2 - bell pepper, diced
  • 1/2 large english cucumber

How To Make fresh corn salad

  • Step 1
    Husk the corn and place in a plastic bag and cook on high for 10 minutes in the microwave. Cool enought to cut the kernals off into a large bowl.
  • Step 2
    Squeeze lemon and lime juice into the bowl along with the remaining ingredients. Mix well and chill for a couple of hours in the fridge.
  • Step 3
    Serve and Enjoy!
