Fall Quinoa Salad

Simply the perfect Fall salad.

Ingredients

  •   2 c
    quinoa, cooked
  •   1 small
    green apple, chopped
  •   1/4 c
    cranberries, dried
  •   1/4 c
    pecans, chopped
  •   1/2
    butternut squash, chopped
  •   1 c
    kale, chopped
  •   1/2 small
    red onion, chopped
  •   1 Tbsp
    olive oil
  •   1 large
    lemon, fresh squeezed
  •  
    salt/pepper

How To Make

    Cook quinoa according to package, set aside
  • 2
    In a saute pan add the olive oil, kale and butternut squash cook & chopped red onion....cook about 5 mins....till kale is a little wilted and squash al dente.

    In a large bowl combine cooled Quinoa,Kale, squash, red onion mixture...then fold in the pecans, green apples, cranberries...then the fresh lemon juice and salt/pepper
