Ingredients
- 2 cups quinoa, cooked
- 1 small green apple, chopped
- 1/4 cup cranberries, dried
- 1/4 cup pecans, chopped
- 1/2 - butternut squash, chopped
- 1 cup kale, chopped
- 1/2 small red onion, chopped
- 1 tablespoon olive oil
- 1 large lemon, fresh squeezed
- - salt/pepper
How To Make fall quinoa salad

Step 1Cook quinoa according to package, set aside

Step 2In a saute pan add the olive oil, kale and butternut squash cook & chopped red onion....cook about 5 mins....till kale is a little wilted and squash al dente.

Step 3In a large bowl combine cooled Quinoa,Kale, squash, red onion mixture...then fold in the pecans, green apples, cranberries...then the fresh lemon juice and salt/pepper
