This has always been one of my favorite sandwiches. Growing up on a farm gave me all the riches of good eating.

Ingredients
- 6 slices bread, any type you like, toasted
- 1/3 cup mayonnaise
- 4 slices tomato, cut thick
- 4 - eggs, hard boiled and chopped
- 1 tablespoon pickle relish, sweet
- 6 slices bacon, cooked crisp
- 1/4 teaspoon paprika, sweet mild
- 1 bunch watercress

Step 1In a bowl, combine chopped eggs, pickle relish, mayonnaise, crumbled bacon, and paprika

Step 3Stack sandwich starting with a slice of buttered toast, top with egg mixture, another slice of toast, tomato, and water cress, then top with another slice of toast.

Step 4This sandwich is delicious served with a half cup of cottage chees on the side and a slice of cantaloupe.
