I love coleslaw and this one is so colourful. You can double the recipe if you wish.

Ingredients

  • FOR THE SALAD
  • 1/2 large head savoy cabbage
  • 1 large carrot, shredded
  • FOR THE DRESSING:
  • 1/4-1/2 cup xylitol
  • 1/4 teaspoon sea salt
  • 2 teaspoons dry mustard
  • 1 tablespoon celery seed
  • 1 cup unfiltered apple cider vinegar
  • 2/3 cup grapeseed oil

How To Make easy sugar free coleslaw

  • Step 1
    Shred the carrots and cabbage and put into a medium size bowl.
  • Step 2
    Combine the other ingredients in a small sauce pan and warm until the Xylitol is dissolved.
  • Step 3
    Cool the dressing
  • Step 4
    Pour "some" of the dressing on the cabbage/carrot mixture and stir making sure it's all coated
  • Step 5
    If you have left over dressing you can freeze it.
  • Step 6
    Enjoy!
