cucumber salad
(1 RATING)
This is a crowd pleaser, especially the men when it is real hot outside. The recipe comes from my son's German Grandmother. If you need to go up on your ingredients to add more vinegar, sugar, or water, feel free to make the changes.

Ingredients
- 6 large cucumbers - any variety
- 2-3 tablespoons salt
- 1 large onion, diced
- 1 tablespoon canola oil
- 1/4 cup water
- 1/4 cup sugar
- 1 cup white vinegar
How To Make cucumber salad
-
Step 1Peel cucumbers, and slice thinly into a large bowl. I use Presto Salad Shooter to make uniform slices. Sprinkle Salt over cucumbers and let set to draw out water. After about 30 minutes, squeeze all the water out of the cucumbers, and place them into another large bowl. Do not rinse, they will not be too salty.
-
Step 2Add diced onion to the cucumbers. Mix together oil, sugar, water, and Vinegar, and taste to ensure the mixture suits your family's taste. If you wish it sweeter, add more sugar. We prefer our cucumbers tangy, and the salt and tang from the cucumbers helps cool you down. It is also good for your menfolk when they get cramps from the summer heat.
-
Step 3Pour vinegar mixture over cucumbers, and mix well. At this time I salt and pepper my salad to taste. It is best served chilled, but can be served immediately.
