    cucumbers
  • 1/2 - 1
    red onion, thinly sliced
  • 1/4 c
    olive oil
  • 1/4 c
    vunegar
  • 1 Tbsp
    chopped parsley
  • ·
    salt and pepper to taste

How to Make CUCUMBER PARSLEY SALAD

Step-by-Step

  1. Peel cucumbers and thinly slice. Place in a glass bowl. Sprinkle with salt. Let stand for 1 hour or longer. Drain and squeeze out liquid. Combine with remaining ingredients. Makes about 4 servings.
