Ingredients

  • 2 - cucumbers
  • 1/2 - 1 - red onion, thinly sliced
  • 1/4 cup olive oil
  • 1/4 cup vunegar
  • 1 tablespoon chopped parsley
  • - salt and pepper to taste

How To Make cucumber parsley salad

  • Step 1
    Peel cucumbers and thinly slice. Place in a glass bowl. Sprinkle with salt. Let stand for 1 hour or longer. Drain and squeeze out liquid. Combine with remaining ingredients. Makes about 4 servings.
