My mom used to pick every vegetable out of our garden that she used in this salad. It is very refreshing on a hot summer day.

Ingredients
- 6 large sliced cucumbers
- 4 large tomatos - seeded
- 1 large red onion
- 2/3 cup white or red wine vinegar
- 1 cup water
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
How To Make cucumber garden salad

Step 1Peel (optional) cucumbers and slice about 1/4 inch thick. Cut and seed tomatos. Peel and slice red onion.

Step 2Put all vegetables into a bowl, pour vinegar and water over the vegetables. Water is approximate - you need enough to ensure all vegetables are covered. I use enough vinegar to ensure a very tart flavor - again amounts are approximate.

Step 3Add salt and pepper. Cover and refrigerate for several hours before serving - allows flavors to develop well.
