creamy cucumber salad

My Mom was big on vinegar salads. We grow cucumbers in our garden every year. So I love being able to make this recipe all summer long. Quick & Easy to take to any function.

Ingredients

  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 4 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ginger, ground
  • 1/2 teaspoon white pepper
  • 6 medium cucumbers (2 pounds)
  • 1/2 large red onion
  • 1/2 cup sour cream
  • 2 - green onions. chopped (for garnish only)

How To Make creamy cucumber salad

  • Step 1
    In a glass bowl (do not use a metal bowl) mix together everything except the cucumbers and red onions. Make sure the sugar gets thoroughly dissolved.
  • Step 2
    Peel and slice cucumbers (about 1/4 slices) and slice the red onions in long thin slices. Add to the bowl and cover for 2 to 24 hours.
  • Step 3
    Before serving. Drain the liquid and add the sour cream, then top/garnish with sliced green onions (optional).
