Creamy Cauliflower Salad
I tried to replicate the flavor from our family's potato salad recipe.
Hubby said it's perfect, don't change a thing!!
1 largecauliflower, cut into small florets
2/3 ccelery, cut very small
1 bunchgreen onions, cut up to the green, cut very small
4hard boiled eggs, chopped
2/3 cmiracle whip
1/4 chalf and half
·salt and pepper to taste
How to Make Creamy Cauliflower Salad
- Cook cauliflower florets until tender. About 5 or 6 minutes. DON'T OVER COOK! Keep them a little crisp.
Drain well, and set aside to cool.
- While the cauliflower is cooling, cut the celery, green onions, peel and chop the hard boiled eggs.
Add to the cooled cauliflower, and mix together.
Season with salt and pepper to your liking.
- In a small bowl mix together the miracle whip, sugar, and the half and half.
Pour over the cauliflower mixture, and mix well.
- Chill well, and serve!
