Ingredients
- 3/4 cup couscous, uncooked
- 2 cups canned garbanzo beans
- 2 medium tomatoes, seeded and chopped
- 1 cup peeled, seeded, and chopped cucumber
- 1 cup chopped fresh parsley
- 1/2 cup finely chopped green onions
- 3/4 cup olive oil
- 1/2 cup lemon juice
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon ground coriander
- 1 teaspoon dijon mustard
- freshly ground pepper to taste
How To Make couscous salad

Step 1Cook the couscous according to the package directions. Let it cool.

Step 2Combine the couscous, garbanzo beans, and the next 4 ingredients in a large bowl. Toss gently.

Step 3Combine the olive oil, lemon juice, garlic, salt, coriander, mustard, and pepper to taste in a jar; cover tightly and shake vigorously.

Step 4Pour the dressing over the couscous mixture; toss gently. Serve immediately.
