This is a potluck recipe or something to take to work to share with co-workers. It makes enough for about a dozen!

Ingredients

  • 3/4 cup couscous, uncooked
  • 2 cups canned garbanzo beans
  • 2 medium tomatoes, seeded and chopped
  • 1 cup peeled, seeded, and chopped cucumber
  • 1 cup chopped fresh parsley
  • 1/2 cup finely chopped green onions
  • 3/4 cup olive oil
  • 1/2 cup lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon ground coriander
  • 1 teaspoon dijon mustard
  • freshly ground pepper to taste

How To Make couscous salad

  • Step 1
    Cook the couscous according to the package directions. Let it cool.
  • Step 2
    Combine the couscous, garbanzo beans, and the next 4 ingredients in a large bowl. Toss gently.
  • Step 3
    Combine the olive oil, lemon juice, garlic, salt, coriander, mustard, and pepper to taste in a jar; cover tightly and shake vigorously.
  • Step 4
    Pour the dressing over the couscous mixture; toss gently. Serve immediately.
