This was shared with me from a acquaintance at a pot luck and it has become one of my favorites. It is actually pretty healthy too using the alternatives listed :) enjoy !!!!!

  • 1 can(s)
    sweet corn, drained
  • 1 can(s)
    mexican corn, drained
  • 1/4 c
    red pepper,diced
  • 1/4 c
    green pepper, diced
  • 1/4 c
    red onion, diced
  • 1 c
    cheddar cheese, shredded
  • 1 c
    mayonnaise, fat-free
  • 1
    bag of chili cheese fritos, crushed ( i use 1 bag santa fe style tortilla strips found in the salad topping section of my store)

How to Make Corn Salad


  1. Drain the corn....
  2. Chop the veggies....
  3. Mix above ingredients together in bowl...
  4. Just before serving , blend in the mayo, sprinkle on the cheese and top with chips
  5. ENJOY !!!!!!
  6. For a larger amount I use 3 cans each of the corn, 3/4 cups each of the veggies and enough mayo to coat well....and don't forget the cheese and chips :)
