This was shared with me from a acquaintance at a pot luck and it has become one of my favorites. It is actually pretty healthy too using the alternatives listed :) enjoy !!!!!

Ingredients

  • 1 can sweet corn, drained
  • 1 can mexican corn, drained
  • 1/4 cup red pepper,diced
  • 1/4 cup green pepper, diced
  • 1/4 cup red onion, diced
  • 1 cup cheddar cheese, shredded
  • 1 cup mayonnaise, fat-free
  • 1 - bag of chili cheese fritos, crushed ( i use 1 bag santa fe style tortilla strips found in the salad topping section of my store)

How To Make corn salad

  • Step 1
    Drain the corn....
  • Step 2
    Chop the veggies....
  • Step 3
    Mix above ingredients together in bowl...
  • Step 4
    Just before serving , blend in the mayo, sprinkle on the cheese and top with chips
  • Step 5
    ENJOY !!!!!!
  • Step 6
    For a larger amount I use 3 cans each of the corn, 3/4 cups each of the veggies and enough mayo to coat well....and don't forget the cheese and chips :)
