  • 1 medium
    zucchini, diced ( about 2 cups )
  • 2 medium
    tomatoes cored and chopped ( about 2 cups )
  • 2 Tbsp
    chopped mint
  • 2 Tbsp
    olive oil, extra virgin
  • 2 Tbsp
    lemon juice, fresh
  • 1 tsp
    honey
  • 1/2 tsp
    kosher salt
  • ·
    coarsley ground pepper to taste

How to Make CORN and TOMATO SALAD with LEMON DRESSING

Step-by-Step

  1. Combine corn, zucchini, and mint.
  2. Combine oil, lemon juice, honey, salt, and pepper; wisk. pour over salad and mix gently. Serve with Arugula or Spinach.
