  • 1 medium zucchini, diced ( about 2 cups )
  • 2 medium tomatoes cored and chopped ( about 2 cups )
  • 2 tablespoons chopped mint
  • 2 tablespoons olive oil, extra virgin
  • 2 tablespoons lemon juice, fresh
  • 1 teaspoon honey
  • 1/2 teaspoon kosher salt
  • - coarsley ground pepper to taste

    Combine corn, zucchini, and mint.
  • Step 2
